QUICK & EASY RECIPE: MICROGREENS SALAD WITH AVOCADO

From the Farmer's Market to my plate!
Farmers markets are a great way to support local communities and enjoy fresh, nutritious produce. They also offer a direct connection between farmers and consumers, ensuring that the produce you buy is fresh, locally grown, and supports local agriculture.
By purchasing from farmers markets, you are not only benefiting your health but also contributing to the economic growth of your community. These greens are straight from the Farmer's Market to my plate! I picked up these microgeens from The Ol’ 403 at The Smithville Market on Sunday and they were packed with flavor and nutrition.
I love fresh produce and appreciate the local farmers who work so hard year round to provide food to their local communities. Microgreens are versatile and can be added to salads, sandwiches, smoothies, or used as a garnish. Incorporating microgreens into your diet is a simple and delicious way to enhance your overall well-being. Here's a quick and simple microgreen salad recipe that you can enjoy in no time (I kept mine simple and only added avocado and drizzled my own homemade dressing, recipe below):
Ingredients:
- Handful of micro greens (a mix of your favorites) I used Broccoli, Red Cabbage and Rutabaga
- Cucumbers, cherry tomatoes, shredded carrots (or any other preferred veggies)
- Avocado (sliced)
- Your favorite Dressing
Instructions:
1. In a bowl, mix together a handful of micro greens.
2. Top the micro greens with your favorite veggies, such as cucumbers, cherry tomatoes, and shredded carrots.
3. I kept is simple and topped with sliced avocado on top.
4. Drizzle the salad with your Favorite Dressing
(homemade dressing recipe below).
5. Mix everything together and enjoy!
Homemade Dressing Recipe:
- 3 tbsp. Olive Oil
- 1/2 tsp. Oregano
- 1/2 tsp. Sage
- Salt (to taste)
- 1/4 tsp. Pepper
- Juice of 1/2 lemon or lime (freshly squeezed)
Rutabaga microgreens are rich in vitamins A, C, and E, as well as minerals like potassium and calcium. Consuming rutabaga microgreens can help boost your immune system, improve eye health, and support healthy skin. They also contain antioxidants that can help fight inflammation and protect against chronic diseases.
Broccoli microgreens are known for their high content of sulforaphane, a compound with powerful anti-cancer properties. They are also a great source of fiber, vitamins K and C, and folate. Regular consumption of broccoli microgreens can contribute to better heart health, improved digestion, and reduced risk of certain cancers.
Red cabbage microgreens are loaded with antioxidants, particularly anthocyanins, which give them their vibrant color. Anthocyanins have been linked to various health benefits, including anti-inflammatory and anti-cancer effects. Red cabbage microgreens are also a good source of vitamins C and K, as well as dietary fiber.
